Bacon Wrapped Asparagus

Homegrown asparagus steals the show each spring and early summer as the tender stalks are full of outstanding flavor. Add bacon to the mix and you have yourself the perfect appetizer for a dinner party or a wonderful side dish for dinner.

Ingredients

  • 1 bunch fresh Asparagus (20-24 spears)
  • 1 tbsp olive oil
  • 1 tsp pepper
  • 8 slices of bacon

Directions

  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. Snap off the woody ends of the asparagus. This can be done by simply bending the asparagus near the base. It will snap in the correct place. Discard the woody ends.
  3. Place the asparagus in a bowl and drizzle with olive oil and pepper. Toss the asparagus to ensure the spears are all coated in olive oil.
  4. Count the spears of asparagus and divide by 8. That is the number of ‘bundles’ you will wrap, typically 2-4 spears per bundle depending on the thickness of the asparagus.
  5. Take one bundle of asparagus and 1 slice of bacon. Hold the asparagus bundle in one hand. Take the bacon and begin wrapping it around the asparagus starting halfway up the spear, ensuring that the bacon overlaps to secure it. Repeat this step with remaining bundles of asparagus.
  6. Bake for 25-30 minutes, depending on the thickness of the asparagus and bacon. If you like crispier bacon, add an additional 5 minutes.
