Buffalo Cauliflower Bites

Ingredients

  • 1 large head of cauliflower or 2 small heads cut into florets (not too small
  • ½ cup flour
  • ½ cup water
  • 2 tsp onion powder
  • 2 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup Franks Red Hot Sauce (or a hot sauce of your choosing)
  • 2 tbsp butter, melted
  • Ranch or Blue Cheese dressing for serving, optional

Directions

  1. Preheat oven to 450 degrees and line a baking sheet with parchment paper.
  2. Cut cauliflower into florets. This can be done in advance if you are looking to save time on a busy weeknight. 
  3. In a large mixing bowl, mix together the flour, onion powder, paprika, salt, and pepper then add the water in by using a whisk to make sure the batter is smooth and not lumpy. 
  4. Once batter is smooth, add in the cauliflower florets and toss until each floret is nicely coated in batter. Once coated, place the cauliflower on the lined baking sheet, leaving space between each piece. 
  5. Bake for 20 minutes, flipping halfway through. 
  6. While the cauliflower is cooking, combine the hot sauce and melted butter in a bowl and whisk together. 
  7. Once cauliflower has cooked for 20 minutes, remove from oven and spoon hot sauce mixture over each piece and then flip and spoon sauce on the other side. 
  8. Once coated in sauce, place the cauliflower back in the oven for another 15-20 minutes until the cauliflower pieces are slightly golden brown. 
  9. Serve warm with ranch or blue cheese dressing. Add celery or carrot sticks for an added flair!
