Rich in essential nutrients, such as potassium and vitamin C, this salad is sure to be a delightful complement to any grill out or summer potluck.
Shuck corn, cut off kernels and put into a large bowl.
Peel and dice cucumbers, add to bowl.
Core and dice tomatoes, add to bowl. Dice onion andadd to bowl.
In another small bowl, whisk together oil, vinegar or lemon juice, garlic, and salt.
Pour over salad andtoss to combine thoroughly.
Mince herbs and use to garnish salad.
