An easy and versatile salad that can be transformed for the seasons. Swap out the toppings for in-season ingredients. Make it a meal by adding chicken, steak, or salmon on top.
Ingredients
Base
- 1-2 bunches of kale
washed, destemmed and chopped - 2 teaspoons olive oil
- Pinch of salt
- 1-2 bunches of kale
Seasonal Toppings
choose as many as you’d like, mix and match
- 1 cup chopped broccoli
- 1 cup chopped cauliflower
- 1 diced cucumber
- ½ cup shredded carrots
- ¼ cup diced red onion
- ½ cup toasted almonds
- ½ cup sunflower seeds
- ½ cup cheese (feta, cheddar, or blue cheese are great options)
- ½ cup raisins or dried cranberries
Dressing
- ¼ cup avocado oil (olive oil works well too)
- 2 tbsp fresh lemon juice
- 3 tablespoons red wine vinegar
- 2 tablespoons dijon mustard
- 1 tablespoon minced garlic
- Pinch of salt and pepper
- 2 tsp of sugar or honey (can always add more if you want the dressing sweeter)
Directions
- Wash, destem, and chop kale.
- Massage kale with olive oil and a pinch of salt. Set aside in a large bowl.
- Make dressing. Adjust sugar/honey quantities to your desired liking. Whisk all together and set aside.
- Add desired toppings to salad. 3-4 toppings is a great amount. Mix together with kale.
- Whisk dressing one more time and pour over salad. Mix all together and serve!
