An easy and versatile salad that can be transformed for the seasons. Swap out the toppings for in-season ingredients. Make it a meal by adding chicken, steak, or salmon on top. 

Ingredients

Base

    • 1-2 bunches of kale
      washed, destemmed and chopped
    • 2 teaspoons olive oil
    • Pinch of salt


Seasonal Toppings
choose as many as you’d like, mix and match

    • 1 cup chopped broccoli
    • 1 cup chopped cauliflower
    • 1 diced cucumber
    • ½ cup shredded carrots
    • ¼ cup diced red onion
    • ½ cup toasted almonds
    • ½ cup sunflower seeds
    • ½ cup cheese (feta, cheddar, or blue cheese are great options)
    • ½ cup raisins or dried cranberries


Dressing

  • ¼ cup avocado oil (olive oil works well too)
  • 2 tbsp fresh lemon juice
  • 3 tablespoons red wine vinegar
  • 2 tablespoons dijon mustard
  • 1 tablespoon minced garlic
  • Pinch of salt and pepper
  • 2 tsp of sugar or honey (can always add more if you want the dressing sweeter)

Directions

  1. Wash, destem, and chop kale.
  2. Massage kale with olive oil and a pinch of salt. Set aside in a large bowl.
  3. Make dressing. Adjust sugar/honey quantities to your desired liking. Whisk all together and set aside.
  4. Add desired toppings to salad. 3-4 toppings is a great amount. Mix together with kale.
  5. Whisk dressing one more time and pour over salad. Mix all together and serve!
