If only homegrown tomato season could last year round in Minnesota. While we know that can’t happen, we might as well find ways to enjoy the deliciousness that red, ripe, Minnesota Grown tomatoes have to offer. This Fresh Caprese Salad is perfect for a party, served alongside burgers, or as a meal in itself.
Ingredients
- 3-4 medium Untiedt’s red, ripe slicing tomatoes
sliced into ¼” slices - 1 pound fresh mozzarella cheese
sliced into ¼” slices - 1 bunch fresh basil
leaves removed from the stems - Olive oil
- Coarse sea salt
- Black pepper
- Optional: Balsamic Reduction (The brand Alessi has a great option if you would rather not make it yourself)
Directions
- On a medium platter, layer the tomatoes and mozzarella in an alternating pattern, sticking a fresh basil leaf or two between each. Drizzle with olive oil, and sprinkle with coarse sea salt and a pinch of black pepper.
If desired, add a drizzle of Balsamic Reduction over the top as well.
