3 -Large tomatoes
1 -Green bell pepper, diced
1 -Cucumber, peeled & diced
1 cup -Celery, diced
½ cup -Onion, diced
4 cups -V8 juice
2 -Avocados, diced
5 tbsp -Red wine vinegar
4 tbsp -Olive oil
2 tsp -Salt
½ tsp -Black pepper
¼ cup -Cilantro, minced

Garnishes: Sour Cream, and Croutons

Directions:

Be sure all vegetables are finely diced. Combine all
ingredients in a large non-metallic bowl and chill
overnight. Serve cold soup with a dollop of sour cream
and croutons in a bowl.
