2 slices -bacon, cut in 1 inch pieces
¼ cup -diced onion
2 lbs -asparagus, trimmed and cut into 1 inch pieces
2 tsp -dijon mustard
Coarse salt & ground pepper
Parsley to garnish
Directions:
In a large skillet, cook bacon over medium, stirring
occasionally, until browned and crisp. With a slotted
spoon, transfer to paper towels to drain. Add
asparagus and onion to pan, season with salt and
pepper. Cook, stirring occasionally, until asparagus is
tender. Remove from heat and stir in bacon, mustard,
and sprinkle with parsley.
